- Canola oil
- 4 corn cobs
- 1/4 cup of mayonnaise
- 1 tsp. of lime zest
- 1 1/2 tsp. of lime juice
- 1/2 tsp. of chili powder
- 1/4 cup of grated cotija cheese
- 1/4 cup of freshly chopped cilantro
Instructions:
- Preheat your grill to medium-high.
- Once your grill is hot, clean and lightly oil grate with canola oil.
- Shuck your corn cobs.
- Place corn cobs on the grill and turn occasionally.
- Repeat this process until they are charred, or about 6 to 8 minutes.
- In a bowl, combine the mayonnaise, lime zest, and lime juice.
- Brush the mixture on the cooked cobs
- Top with chili powder, cotija cheese, and fresh cilantro to taste and enjoy!
